I am someone who struggles with the mundane. Sigh. I don’t love the idea of meal planning or eating the same thing again and again. Which is how I came to create in the kitchen when we began raising our family. The people need to be fed, and eating out isn’t really an option. Questions like, “How can this chicken not taste like the chicken we ate last night,” or “how can I make this ____ more flavorful with the basic ingredients I have on hand,” began to drive my pursuits when the dinner prep hours began. I’d tie up my apron, turn on some music, open the fridge, and decide what I’d do with what we had. That being said, salads are of course a great option for a quick and healthy meal or veggie side. This is another dish where some small adjustments to your usual go to can have major impact on this family table staple. Enter, the salad crunchies. You’ve had them, and you love them, but you might not know how EASY they are to whip up and add to your greens.

Ingredients

1-cup almond slices

1/4 cup sesame seeds

1/4 tsp salt

1/2 tsp cayenne

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 cup sugar/brown/coconut sugar

DIRECTIONS

  1. Add all ingredients to cast iron pan.
  2. Toast together over medium heat until sugars melt and stick to the nuts and seeds.
  3. Stir periodically until sugar is melting, then stir to coat, and remove from pan onto parchment paper, or silpat liner.
  4. Allow to cool, then use freely to add spicy, crispy, salty, sweet additions to your greens!
