Easiest Chicken Curry

I’ve been making this curry for probably 10 years now. It’s my kids favorite smell when they come in the house and I always serve it with a side of my flatbread. (also easy and dough recipe found here). This curry truly is a simple and easily adaptable recipe for non-traditional dietary needs. If you need it fully vegan, substitute the meat for charred cauliflower and swap out Greek yogurt for dairy-free yogurt or use all coconut milk. If you prefer more spice, kick it up with a spicy curry blend! If you have next to know zero time to make dinner, use the rotisserie and this comes together faster than it takes to make the pot of rice! You get the idea, here is a core recipe, you feel free to add or subtract what you want to make it a creamy warm pan of what your family loves to eat! This recipe does make enough curry for 8-10 servings, or 6-8 with leftovers, and leftovers are like a good stew, the flavor gets even better with a night in the fridge.

Ingredients

3lbs boneless chicken thighs/breasts, or a rotisserie chicken

1-2 cans coconut milk, depends on how thick you like the sauce

1-2 cans fire roasted tomatoes, pour off excess liquid, but leave some on the tomatoes.

1/2 cup-1 full cup greek yogurt/dairy free equivalent

2-3 TBLS Favorite Curry Spice

Salt+Pepper to taste

ghee/avocado oil

Rice/Cauliflower rice

Cilantro/other favorite herb for garnish

DIRECTIONS

  1. Hammer out your chicken so that they’ll fry quicker and more evenly. Salt and pepper the meat.
  2. Heat 1-2 tBL of ghee or oil in large frypan.
  3. Sear the meat and flip once for best brown.
  4. Remove from the pan and rest.
  5. Add thinly sliced onions to the same pan, as well as some more ghee.
  6. Saute onions, and add about 1-2 TBL of curry spice to the pan. Toss the onions while browning in spice. Around 5 min to soften.
  7. Add coconut milk, greek yogurt, and lightly drained tomatoes, stir to incorporate.
  8. Taste! Adjust seasoning. I always add more curry, some salt and pepper.
  9. Serve over rice and with favorite green veggie. It goes particularly well with roasted broccoli or brussels that have been seasoned with curry spice too.
