Chocolate Covered Blueberries

In my early twenties, I worked at Crate&Barrel during its heyday introduction into most major city markets. It was so fun! Surrounded by unique kitchen gadgets that I’d never seen, learning more about cookware and why the best knives had earned that title. I loved flipping through all of the new cookbooks that came through our store and one that I remember finding was called 12 Best Foods. The whole book was written with the understanding that these 12 foods are the most nutrient-dense. Chocolate and blueberries are both on that list! I’ve been making these blueberries for an easy dessert for 20 years now, and they always deliver. People can’t believe how simple and delicious this combination is, and I hope you enjoy them too!

Ingredients

2 pints of blueberries washed and brought to room temperature

2 cups chocolate chips/chunks of choice

1 tablespoon coconut oil (optional, but I like the addition to keep the chocolate shell smooth for looks)

DIRECTIONS

  1. Wash and dry room temp blueberries.
  2. In a microwaveable bowl, or a glass bowl over a pot of simmering water, warm chocolate chips and coconut oil until melted together.
  3. Dump all blueberries in bowl of chocolate and toss until coated.
  4. Spoon clusters of berries onto a parchment or wax paper lined sheet pan.
  5. Refrigerate until chocolate is set. These will keep a few days in the fridge before the blueberries begin to weep from the inside. Still tasty, just messy.
